THAI DISHES ARE like well-composed tunes. They include layers and notes that are in balance with each other. You’ll find an example of this at Aiyara Thai Cuisine in Temecula. Owner Waratch Polsingkhorn (a.k.a. “Chef PM”) says dishes are made from “exclusive recipes” and use the finest and freshest ingredients. Start with an appetizer like Chicken Satay: grilled chicken skewers marinated in coconut milk with curry powder and served with peanut sauce and cucumber sauce.

Main dishes are also abundant, and the menu guides you to a variety of choices, including fresh from the wok. Among those is the Crying Tiger: marinated beef ribeye served with Thai chili sauce. If you love curry, you’ll find yellow, green and red varieties, among others. Stir-fry is another option. Try the Sweet & Sour Stir Fry that includes garlic, tomato, cucumber, white onion, pineapple and carrots. A new dish, Lady Fingers, features shrimp and ground chicken marinated with cilantro and sesame oil, wrapped with rice paper, fried until golden and served with homemade sweet and sour sauce.
